This iteration of Pauls red project focuses on very short maceration of three days and with very little work of the skins, then basket pressed back into stainless steel. Racked once before bottling with no additions. The result is a vibrant, "zero zero" red that avoids the heavy tannins often associated with the variety. Project 108 is the "zero zero" workshop of Paul
